Vegetable Frittata

 

This recipe is adapted from www.recipetineats.com - Nagi Maehashi's recipe.

I baked mine in an 8x8 square pan, (you can substitute a 9" round pan), using 8 eggs. You may think all the veggies won't fit - but they do! The sweet potato gives it a sweet taste and the kids will like it as all the veggies are soft enough once baked. 

You can roast the veggies the day before, making the assembly and baking the next day super easy. 

I used soy milk instead of dairy and omitted the cheese, but added about a TBS of nutritional yeast - making this recipe Vegan friendly.
