Overnight Oats



Serves 1-2 people 
Ingredients: 
  • 1 cup almond milk or any other nut milk
  • 1/4 cup filtered water
  • 1/2 cup rolled oats
  • 1 apple, cored, peeled and grated
  • 1 tbsp ground flaxseeds
  • 2 tsp sunflower seeds
  • 1 tsp natural sweetener or honey
  • 1/2 tsp cinnamon
  • Fresh berries, blueberries, raspberries, blackberries 
  • 1/2 sliced banana 
  • 1 tbs pepitas (pumpkin seeds) or sliced almonds
Directions: 

  1. Place the oats, flaxseeds, almond milk and water in a bowl, covered in the fridge and leave overnight. 
  2. Before serving, grate the apple and stir it through the oats. 
  3. Spoon into bowls, and top with honey, or sweetener, fresh berries, cinnamon, sliced bananas, sunflower and pumpkin seeds.

  5. Omit the honey for Vegan recipe.
