Banana Bread




Ingredients

½ cup vegetable oil or coconut oil *
1/2 cup white sugar or organic cane sugar (or even a bit less)
2 1/2 to 3 bananas - mashed
2 eggs at room temperature
1 ½ cups of all-purpose flour
½ tsp. baking soda
pinch of salt

¼ cup chopped walnuts or pecans (optional)
1/2 cup chopped cranberries (fresh or frozen) (optional)
1 tsp grated lemon or orange rind (optional)

Method

Whisk the oil, sugar and eggs together.
Then add the flour, baking soda, salt and nuts and mix with a spoon.
Then add the mashed bananas and mix.

Put into a greased loaf pan (about 4“ x 8“) - lined with parchment paper. 

Bake 45 minutes to on hour at 350F.

The loaf is done when it is light brown on top and a knife or toothpick comes out clean/dry when
inserted to test.

You can also put this batter into muffins tin.  Use paper liners and bake at 350F - 15-20 minutes till a toothpick inserted into the muffin comes out clean.
 

*If you are using coconut oil, make sure the bananas and eggs are at room temperature so the oil doesn’t solidify when mixing ingredients.

The original recipe called for 1 cup of sugar, but I find even 1/2 cup is enough as there is a lot of sweetness from the bananas.
