Bircher Muesli with Fruit


 This is a delicious way to have oats if you're tired of having porridge.  It will keep about 2 days.  We loved having this in Australia and it was also on many breakfast buffets in Europe.


Serves 4-6
3/4 cup per serving
Ingredients
  • 2 cups rolled oats (uncooked)
  • 1 cup apple juice
  • 1 coarsely grated apple
  • 2 tablespoons fresh lemon juice
  • 1/2 cup plain yogurt
  • 1/2 cup sliced fresh peaches, pears, mango or passionfruit
  • 1/2 cup mixed berries - blueberries, raspberries, blackberries, or strawberries (or a combination) 
  • 2 tablespoons of honey
  • 1/2 teaspoon of cinnamon
  • 2 tablespoons of sliced almonds or pecans
Preparation
  1. Place the oats and apple juice in a bowl and soak for 1 hour, or overnight.
  2. Add the grated apple, yogurt and lemon juice to the oat mixture and mix well.
  3. Spoon into serving bowls and top with fruit.  Drizzle with honey.
  4. You can add a little more yogurt or milk if you like.  Served cold.
  5. Sprinkle with cinnamon and sliced almonds.
