Ingredients
- 2 cups rolled oats (uncooked)
- 1 cup apple juice
- 1 coarsely grated apple
- 2 tablespoons fresh lemon juice
- 1/2 cup plain yogurt
- 1/2 cup sliced fresh peaches, pears, mango or passionfruit
- 1/2 cup mixed berries - blueberries, raspberries, blackberries, or strawberries (or a combination)
- 2 tablespoons of honey
- 1/2 teaspoon of cinnamon
- 2 tablespoons of sliced almonds or pecans
Preparation
- Place the oats and apple juice in a bowl and soak for 1 hour, or overnight.
- Add the grated apple, yogurt and lemon juice to the oat mixture and mix well.
- Spoon into serving bowls and top with fruit. Drizzle with honey.
- You can add a little more yogurt or milk if you like. Served cold.
- Sprinkle with cinnamon and sliced almonds.
