Apple Cinnamon Cake


Filling

3 – 4 apples, peeled and sliced 1/8” to 1/4"
Granny Smith, Fuji, Macintosh work well
1 tsp cinnamon
1/8 cup sugar 
 
Batter
¾ cup sugar
¾ cup canola oil
2 eggs
¼ cup water
1 ¾ cups flour
2 tsp baking powder
Pinch of salt

Method

Grease a 9” x  9” baking pan.  Line with parchment paper, and spray or grease again.
Pour half the batter in the pan.  Top with the apple filling.  Pour the remaining batter on top so it covers the top evenly.
Bake at 350F for 45 minutes to one hour until light brown on top.
Sprinkle with icing sugar, and serve warm with icecream or whipped cream.
