Crustless Quiche



Serves 4

Ingredients

1/4 cup minced onion
3/4 cup shredded swiss or cheddar cheese
8 slices of cooked bacon, chopped or
1/2 cup cooked ham, cubed
1/2 cup red peppers, chopped cooked
3 extra large eggs
1 1/2 cups milk or half and half cream
1/2 tsp salt
1/2 tsp dried mustard (optional)
1/4 tsp sugar

Method

Sprinkle the cooked bacon or ham, pepper, cheese and onion in the bottom of a greased 8x8 pan.
Beat the eggs and remaining ingredients together. Pour over the bacon.
Bake at 400F (200 C) for 15 minutes, then reduce to 300F (150C) and bake for 20 to 30 minutes, or until a knife inserted 1 inch from the edge, comes out clean and the quiche has set.

Let cool 10 minutes.

Notes

You can use any of your favorite cooked vegetables, such as mushrooms, broccoli, spinach, asparagus. You can also use goat cheese (crumbled) instead of swiss or cheddar for more variety. 
Try cooked sausage or smoked salmon instead of ham.
Or, just use vegetables for a delicious a vegetarian quiche.
