Porketta Spice Mix



3 tablespoons dill seed
1 tablespoon fennel seed
1/2 teaspoon oregano
1 teaspoon lemon pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder

Mix the seasonings together in a small bowl.
You add more salt as you like.  There is a little salt in the lemon pepper.

Brush chicken or pork with olive oil. Sprinkle with spice mix and roast, bake or barbeque.  
This is great on pork tenderloin, pork chops, pork loin roast.  I also like it on chicken breasts and thighs and even on a whole chicken.

Porketta is widely available in Sudbury, Ontario Canada. It is usually made from the pork shoulder and has the spice/herb mixture throughout the center as a rolled roast. Some are flavored mainly with dill, fresh and dried and lots of garlic. Cooking times specify around 40-45 minutes per pound at 350F, which may seem like a lot, but due to the cut of the meat, it needs this time to cook and be tender. If you are using a loin roast, you could reduce the time.
