When the fall comes, there's a huge variety of apples available.
MacIntosh apples are excellent for baking and for making apple sauce or baked apples.
Makes 4 cups
Ingredients:
4 pounds apples, peeled and cored (about 8 apples)
4 strips of lemon peel
1/4 teaspoon ground cinnamon or 1 cinnamon stick
1 cup water

Directions:
Peel, core and chop your apples into large chunks, about 8 pieces per apple. Put all of the ingredients in a large pot and bring to a boil. Once boiling, reduce it to a simmer and cover the pot. Cook for approximately 30 minutes, or until apples are quite soft. (I like to see that I can squish them with the back of a fork.) Fish out the lemon peels and whole cinnamon stick, if you used one, and let it cool.
Puree in a food processor, blender or food mill. Or for a chunkier version, use a potato masher.
